Has anyone tried to mount an iPad in their car with a roll cage mount? Is there a product made for this? Or has someone done it with something they've made?

Why would you do that? I've never seen it, honestly it would be hard to see with the vibration you'd likely get.
If you're gonna use it for visible laptimes/telemetry remember the red mist it can cause.
He's doing it so he can play games while racing. Grand Prix Story is pretty addicting and I can totally see doing that while driving.

Edit: That's "iPad," not an "iPod." I misread the subject. Still, the principle is probably more or less the same, just embiggenated.
However, I caution that Jay and TEO will be very dubious of it. They tend to frown on (or yell at you about) things that could become projectiles in a rollover. So if you mount it, make sure it's not going anywhere and the fasteners by which it's fastened can't in any way unfasten.

These may not be sturdy enough for race car application but could serve as inspiration for a Home Depot concocted Lemony solution.
With enough zip ties, you can hold the world.

Well, without it the kids will never shut up.
I've seen people mount iPhones and iPods with suction cup type devices similar to how a go pro is mounted in a car so they can use it for data acquisition. Yet I'm not quite sure what you would use it for in your Lemon other than streaming some cruising tunes!
As for the iPad... no I've never seen anyone mount one of those because it seems silly to mount the large iPad when you can mount the small iPhone... but who knows maybe I'm missing something
maybe mount it for GPS so you don't get lost on the track.
I used my iPhone and Harry's Lap Timer Pro app this past weekend to record video and do data acquisition. We had a couple hiccups - the first session we forgot to plug in so the battery died which didn't lose video but did lose some lap data and corrupt some. The second session the phone ran out of room which caused the app to dump (as in erase) the entire session's video and lose most of the lap data. But I still loved it, just need to iron out some of the kinks. Now I'm wishing I had sprung the extra $200 for the 64gb iPhone.
Anyway, point being there's a use for the iOS devices in Lemons, the apps out there are pretty incredible. I'm not sold on using an iPad for this but if it's what you've got I guess you could make do.
Love Harry's Lap Timer and fortunately I have the 64gb phone... still not quite sure data acquisition is necessary for lemons but the video is nice!! The most worthwhile stuff such as lap time and standing I get all from Race Monitor.

Just FYI suction cup type mounts are not allowed (at least not when we went through tech) without some sort of secondary thing holding it in. We ended up Zip Tying the mount to our rollcage (this was last year with a go-pro)
most groups will require metal to metal mounting... but yeah a zip tie works just as well
If I had to guess, the OP wants to run something with OBD2 monitoring. That's what I would do if I was a) bored, b) blew $500 on an ipad, and c) had a car new enough to have OBD2.
Or, the OP has Tesla envy. That car looks like someone just glued an oversized ipad to the dash.
Ram-Mounts makes a rail mount w/ a locking mechanism. If it's sturdy enough to prevent someone from stealing the ipad w/o breaking it, it's likely sturdy enough to hold your pad.
On my car, when I used it as the occasional commuter car, I mounted an Iphone cradle to the remnants of my dash but disassembling it, removing the flexible shaft/suction cup, and bolting it straight to the remnants of my dash. The holder also had some elastic straps as a backup.
Worked just fine; one of my codrivers forgot his iphone charger at the last race so he used the tbird's spare cigarette power port to charge up his phone during his race session.

That looks sturdy enough to hold up to some advertising, but I wouldn't trust it to hold an iPad through an off-track excursion.
I did Gingerman with my iPhone and a RAM mount. I was very impressed. ROCK SOLID video with nary a judder. Mount is really strong and clamped down tight. I bet the pad mount is the same.
I've been using a RAM mount to put my phone on my bike and in the racecar. They're very solid, inexpensive, and the interchangeability is nice in case I need to buy a different phone mount or want to rapidly switch from bike to car or vice versa. I had one on my steering wheel while doing some app testing, and the mount on my bike was pretty much on the most vibration-ey part of the handlebars. I've never felt like my phone was going to come anywhere close to falling out.
All that said, an iPad is a whole lot bigger than my smartphone, so your experience may vary.
We've been running Two ipads in the car for a while now using Ram mounts. One faces forward and streams video to the world - also nice to watch the in-car camera from the pits on a laptop or something.
The second is collecting data; top speeds in the straights, corner entry and exit speeds, and lap times. Additionally it displays the split times and lap times and +/- from last, best or golden depending on how we have it set up.
Also, the data collection unit can split times up by driver - always good for post race ribbing.
