How did I ever forget about Oakland blues legend Troyce Key and "I Got a New Car?" I saw him perform this Malaise Era automotive classic at Eli's Mile High Club, circa 1982.
Not car-themed, but I've always thought Bo Diddley's "Aztec" was one of the best night-driving instrumentals ever recorded.
On the subject of drivin' instrumentals, the Modern Lovers' "Egyptian Reggae" has always been one of my favorites.
Wall of Voodoo's "On Interstate 15" is another good one.
The recording quality in 1927 wasn't so great, but Weaver & Beasley's "Bottleneck Blues" usually gets on my all-instrumental driving playlist.
Byrne and Eno's "Regiment" also belongs on the Driving Instrumentals list.
Another great road song from Richard Thompson is his paean to the 1952 Vincent Black Lightning.

Just heard a song that must be so obscure that we never heard it - but's been hidden in plain sight all the time:
"Crown Victoria" - Presidents of the USA
"Ode to my Car".
I am not an Adam Sandler fan, but his "Ode to my Car" is the perfect Lemons theme song. Some may know it as the "Piece of Shit Car" song. It fits my Lemons project car perfectly. I think I'll play it during my first tech inspection.
Always liked Steve Earle's "Copperhead Road" too, for the middle part about buying an old Dodge from an auction to tun into a moonshine runner: "Daddy and my uncle tore that engine down. I still remember that rumbling sound".
