I use a regular old miniDV camera (mine happens to be a -edit- Canon). It records 60 minutes, although some can record in lower resolution for 120 minutes. I got an "extended battery pack" that's good for about 6 hours. I mounted to the roll bar with an IO Port camera mount, but some clever welding could eliminate that (I had access to a free one).
Look through the camera in the car before deciding where to mount it. Without a wide angle lens, you'll probably want it pretty far back so you can see the whole windshield. Seeing some on your hands is cool, too.
Tech will probably require a tether strap of some sort so that if the mount fails you don't get bonked with the camera.
