Not sure why Jay said we couldn't but it wasn't the generator - we have had it in the car ever since. We use it to run the air compressors that run our air brake and air horns plus whatever shenanigans we come up with - like the garbage disposal powered margarita machine!
We didn't really care because to tell the truth, it didn't work worth a shit. It was great in the paddock and on the drag strip but once you hit the track turns hard, the generator might hiccup just a little bit from the gas sloshing inside. Once the AC short cycled, the compressor wouldn't restart for a minute. Meanwhile the driver was stewing in tneir own juices with the windows stuck up.
We nearly killed the first driver from heat stroke and all got a good giggle laughing at their misfortune.
I seriously doubt that you could run an AC off an inverter - for long. We had a small 5000BTU unit and it draws way too many amps for the alternator to keep up. As soon as the inverter exhausts your battery, you're done.
